Asian 2-Minute Noodles

A quick and easy, fresh and tasty Asian noodle salad.

Serves 1


  • 1 packet of 2 minute noodles

  • 50g mange tout

  • 2 spring onions, finely sliced

  • ¼ red onion, finely sliced

  • 1 clove of garlic, crushed

  • 1 red chilli

  • 45ml soy sauce

  • 1 lime, juice and zest

  • Sesame oil


  1. Cook the 2 minute noodles according to the packet instructions. 

  2. Blanche the mange tout in boiling water and set aside.

  3. Heat a medium frying pan with a splash of sesame oil and flash fry the red onion. 

  4. Add the garlic, chilli and spring onion. Fry for 1 minute and then add the soy sauce and lime juice and zest.

  5. Reduce by half and pour the soy mixture over the noodles. Add the mange tout and enjoy!
