Everyone needs a great Cream Cheese Frosting recipe and this one won't disappoint.
Covers 10-16 cupcakes
500g cream cheese, softened
1/2 cup butter, softened
2 cups icing sugar, sifted
1 teaspoon vanilla extract
In a medium bowl, beat the cream cheese and the butter together until smooth. Mix in the vanilla and then gradually add the icing sugar. Once all the sugar is incorporated place it in the fridge toset.
Use to ice cooled carrot cupcakes or red velvet cupcakes
