Granadilla and Vodka Cooler

All you need on a hot Summer’s day to stay refreshed! This quick and easy drink is the perfect accompaniment to a lazy Sunday braai with family and friends.

INGREDIENTS

  • 500g sugar

  • 600ml water

  • 200ml fresh lemon juice

  • 500ml fresh passion fruit pulp

  • vodka 

METHOD

  1. Place the sugar, the water and the lemon juice in a saucepan over low heat. Cook on a low heat, stirring until the sugar dissolves. Increase heat and bring to the boil. Simmer for 5 minutes or until syrup thickens slightly.

  2. Stir in the passion fruit pulp, and set aside to cool.

  3. Strain the syrup through a fine sieve into a jug, pushing the pulp through with the back of a spoon, and keep some of the seeds for serving. Pour syrup into an airtight bottle and seal. 

  4. To serve pour passion fruit cordial and vodka to taste and top with water or soda water.
