Breakfast becomes an occasion when you make crumpets. Here’s a delicious recipe to make your own fluffy Blueberry Crumpets for your next weekend brunch.
2 cups Helon Melon Mix
3/4 cup granulated sugar
3 teaspoons baking powder
1 cup milk
2 tablespoons butter, melted
1 cup blue berries
Crème fraiche and syrup to serve
Mix the Helon Melon mix, sugar, baking powder, eggs, milk and butter in a large mixing bowl. Fold in the blue berries, and allow to stand for 15 minutes. If the mixture becomes very stiff you can add a little more liquid.
Spray and cook a large frying pan and heat it to a medium heat. Using a spoon drop small amounts of batter onto the pan.
Turn and cook other side when bubbles break on surface of crumpet, then cook the other side for a further 2-3 minutes or until golden brown.
Serve Stacked with crème fraiche, syrup and some fresh blue berries.
