Helon Melon Blueberry Crumpets

Breakfast becomes an occasion when you make crumpets. Here’s a delicious recipe to make your own fluffy Blueberry Crumpets for your next weekend brunch.

  •  2 cups Helon Melon Mix

  • 3/4 cup granulated sugar

  • 3 teaspoons baking powder

  • 3 eggs

  • 1 cup milk

  • 2 tablespoons butter, melted

  • 1 cup blue berries

  • Crème fraiche and syrup to serve


  1. Mix the Helon Melon mix, sugar, baking powder, eggs, milk and butter in a large mixing bowl. Fold in the blue berries, and allow to stand for 15 minutes. If the mixture becomes very stiff you can add a little more liquid.

  2. Spray and cook a large frying pan and heat it to a medium heat.  Using a spoon drop small amounts of batter onto the pan.

  3. Turn and cook other side when bubbles break on surface of crumpet, then cook the other side for a further 2-3 minutes or until golden brown.

  4. Serve Stacked with crème fraiche, syrup and some fresh blue berries.
