I love this super quick and easy chocolate cake recipe.
2 cups Helon Melon mix ¾ cups cocoa powder 1 ½ tsp baking powder pinch of salt 11/2 cup milk
1 cup vanilla yogurt 2 cups sugar ½ cup oil 1 cup boiling water or hot coffee 2 eggs
500g icing sugar
Preheat the oven to 180°C.
In a large bowl, whisk the Helon melon mix, cocoa, baking powder, salt and sugar together.
In a separate bowl beat the eggs, milk, yogurt, and oil together, the fold the wet ingredients into the dry ingredients.
Pour the batter into a well greased tin and bake for 30-40 minutes or until a skewer inserted into the centre comes out clean.
Let the cake cool completely before removing it from the cake tin.
Beat the butter, icing sugar, cocoa and milk together to make the icing. Add more milk if the mixture is too stiff.
Ice the cake with chocolate icing and serve.
