Strawberry smoothie Cupcakes

These delicious Strawberry Smoothie cupcakes are so quick and easy to make. I love them as I have all the ingredients in my pantry so when I decide to make them with my girls the only thing we need to buy is the smoothie mix.

Makes 16 cupcakes

INGREDIENTS

CUPCAKE:

  • ½ cup butter

  • 1 1/3 cups castor sugar

  • 2 large eggs

  • 1 tsp vanilla

  • 2 ¼ cups flour

  • 3 tsp baking powder

  • ½ tsp salt

  • 1 cup strawberry smoothie

ICING:

  • 175g butter

  • 350g icing sugar

  • ½ tsp vanilla

  • 3 tbsp milk

  • 1 punnet strawberries to decorate

METHOD

CUPCAKE:

  1. Preheat oven to 180°C.

  2. Cream butter and sugar together until pale and fluffy. Slowly add the eggs, then beat in the smoothie and vanilla.

  3. In a separate bowl sift the dry ingredients together.

  4. Combine dry ingredients with the creamed mixture, and fold together gently.

  5. Spoon into paper cupcake cases until ¾ full.

  6. Bake for about 20 minutes. Remove from oven and cool completely before icing.

ICING:

  1. Cream butter and vanilla.

  2. Beat in the icing sugar bit by bit, adding milk whenever the mixture becomes too thick.

To assemble the cupcake:

 Spread the icing on top of the cupcake and decorate with the fresh strawberries.
