TOASTED COCONUT BREAKFAST BOWL

There are numerous benefits of eating Coconut, here's a delicious Toasted Coconut Breakfast bowl recipe to help you incorporate Coconut more regularly into your diet.

Here's how you make it:  

SERVES: 4

INGREDIENTS

  • 1 can coconut milk
  • ½ cup quinoa
  • Pinch of salt
  • 1½ cups instant Jungle oats
  • 1 cup water or coconut water
  • ½ cup coconut flakes
  • Cinnamon to taste
  • Berries for serving

METHOD:

  1. Bring the coconut milk to a boil in a small saucepan. Add the quinoa and salt and cook for 15 minutes or so, until the quinoa is cooked.
  2. Add the water, oats, cinnamon, and salt - cook for just a few more minutes to soften the oats.
  3. Serve up the porridge topped with toasted coconut and anything your heart desires.
